IKÍITU REVIEW

IKÍITU is a renewed expression of Loreto's cuisine, a space where the culinary legacy of the IKÍITU people is transformed without losing its essence. 
For nine years, our mission has been to elevate the traditional flavors of the Amazon, taking them to new standards with respect and creativity.

We work hand in hand with local communities, rescuing the purest ingredients from the rainforest and honoring its richness with a sustainable approach. In each dish, tradition meets innovation, demonstrating that Amazonian cuisine is not only history, but also evolution. 

IKíitu is a sensory journey through the deep flavors of the rainforest, a reinterpretation that invites Peru and the world to rediscover the Amazon through haute cuisine.  

CHEF'S BIOGRAPHY

José Antonio Nogueira Paz (Loreto- 1983)

I am a cook and teacher, born in the heart of the Amazon, in Iquitos.

Since I was a child, the passion for cooking was part of my life, a family legacy that marked my path. My training took me to Lima, where I perfected my technique, taught in renowned gastronomic institutes and worked in prestigious restaurants.

However, my vocation was always linked to a greater purpose, to honor and spread the culinary richness of the Amazon. With that commitment, in October 2016, together with my wife Sandra, I returned to my land to give life to a dream, to create a restaurant that reinterprets Loreto's gastronomy, elevating it without losing its essence. 

Throughout my career, I have proudly represented Amazonian cuisine at fairs such as Peru Mucho Gusto and Mistura, and I had the honor of taking its flavors to the world at Expo Dubai 2022, showing that the Amazon is not only origin, but also innovation and future.
